Stella Rosa® Red
In separate bowls, meat and veggies with seasonings and garlic paste. Let marinate for at least 2 hours or overnight.
When ready to cook, add oil to hot caldero (pot) and add sugar on medium to low heat for about 2 minutes or until you see sugar caramel- ize to a darker brown color. Make sure not to burn or it will taste bitter.
Once sugar is caramelized, turn heat to high and add your meat. Do not move for the first 5-10 minutes to allow the meat to get a nice color. Then you can move your meat around and allow the other side to sear.
Once meat is seared and has a nice rich color, add your veggies and olives.
Add tomato paste and mix well so it dissolves. Once dissolved, add 1 cup of Stella Rosa® Red and enough water or beef broth to cover the meat. Add the bay leaf and fresh cilantro.
Once it begins to boil, let the meat cook on medium to low heat for about 2 hours or until meat is tender.
Serve with white rice or mashed potatoes, a side salad, and a glass of Stella Rosa® Red!
